WHere is a simplified take on a cocktail featured on our latest menu. Designed as a large-volume pre-mixed which is loaded full of flavours associated with festive period, which makes it ideal for a holiday party. Save the extra syrup you can use for breakfast cocktails, desserts, or to make additional servings of the drink.

Makes enough for 10 guests
To make the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Cocktail (produces 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
For the Citrus Syrup: Put every ingredients in a pot, bring to a simmer, stirring until the sugar dissolves. Next, take off the burner allowing it to reach room temperature fully. Pour to a clean bottle, close it keeping it chilled, where it will keep for up to four weeks.
Preparing the Batch Mix: Combine the specified liquids into one sizeable container, allow it to infuse for one hour, then strain , ideally through a fine cloth, so it's perfectly clear.
To serve: Add 85ml of the premix into a mixing glass containing ice, and agitate gently for about 60 seconds until cold. Strain into a frosted cocktail glass or similar, garnish with a few cranberries adding the final touch using a light spray with the mandarin essence over the top.
